The first time I made these BBQ chicken quesadillas, my family couldn&t get enough — they disappeared from the plate in minutes.

Ingredients

  • Chicken & Marinade: 2 cups cooked chicken breast, shredded; 1/2 cup BBQ sauce (your favorite variety)
  • Vegetables: 1 small red onion, thinly sliced; 1/2 cup red bell pepper, thinly sliced; 1/2 cup corn kernels (fresh, frozen, or canned, drained)

  • Extras: 2 tablespoons fresh cilantro, chopped (optional); 1 tablespoon olive oil or butter, for cooking

Instructions

Mix Chicken & BBQ Sauce:
In a mixing bowl, toss the shredded chicken with the BBQ sauce until well coated.
Assemble Quesadillas:
Lay out the tortillas on a flat surface. Evenly distribute the BBQ chicken, onions, bell pepper, corn, Monterey Jack, and cheddar cheese over half of each tortilla. Sprinkle with cilantro if using.
