Ingredients
- Chicken & Marinade: 2 cups cooked chicken breast, shredded; 1/2 cup BBQ sauce (your favorite variety)
- Vegetables: 1 small red onion, thinly sliced; 1/2 cup red bell pepper, thinly sliced; 1/2 cup corn kernels (fresh, frozen, or canned, drained)
- Cheese: 1 1/2 cups shredded Monterey Jack cheese; 1/2 cup shredded cheddar cheese
- Tortillas: 4 large flour tortillas (10-inch)
- Extras: 2 tablespoons fresh cilantro, chopped (optional); 1 tablespoon olive oil or butter, for cooking
Instructions
- Mix Chicken & BBQ Sauce:
- In a mixing bowl, toss the shredded chicken with the BBQ sauce until well coated.
- Assemble Quesadillas:
- Lay out the tortillas on a flat surface. Evenly distribute the BBQ chicken, onions, bell pepper, corn, Monterey Jack, and cheddar cheese over half of each tortilla. Sprinkle with cilantro if using.
- Fold & Seal:
- Fold the tortillas over to form half-moons, pressing gently to seal.
- Cook Quesadillas:
- Heat a large skillet or griddle over medium heat and brush lightly with olive oil or butter. Cook the quesadillas in batches for 2–3 minutes per side, or until golden brown and cheese is melted.
- Slice & Serve:
- Remove from the pan, let cool for 1 minute, then cut each quesadilla into wedges. Serve hot.
