I created this cranberry walnut flatbread when I needed a festive snack for unexpected guests. The combination of fruit and nuts is always a hit at my table.
Ingredients
- All-purpose flour: 1 ½ cups
- Instant yeast: 1 teaspoon
- Fine sea salt: ½ teaspoon
- Sugar: ½ teaspoon
- Olive oil: 2 tablespoons (plus 1 tablespoon for brushing dough)
- Warm water: ½ cup (plus more as needed)
- Cranberries: ¾ cup fresh or dried
- Walnuts: ½ cup, roughly chopped
- Honey: 2 tablespoons
- Flaky sea salt: ¼ teaspoon
- Goat cheese: 2 tablespoons crumbled (optional)
- Fresh rosemary: 1 tablespoon chopped (optional)
Instructions
- Make dough:
- In a large bowl, combine flour, instant yeast, salt, and sugar. Stir in olive oil and warm water until a soft dough forms. Add more water if needed, 1 tablespoon at a time.
- Knead & rest:
- Knead dough on a lightly floured surface for 5 minutes until smooth. Place dough in an oiled bowl, cover, and let rest for 15 minutes.
- Prep oven & pan:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Shape dough:
- Roll out the dough into a 10x6-inch rectangle or oval. Place on the prepared baking sheet.
- Add toppings:
- Brush dough with 1 tablespoon olive oil. Evenly scatter cranberries and walnuts over the top. Sprinkle with flaky sea salt.
- Bake:
- Bake for 15–18 minutes, or until the edges are golden and the flatbread is cooked through.
- Finish & serve:
- Remove from oven. Drizzle with honey. Top with goat cheese and rosemary, if using. Cool slightly, slice, and serve warm.
