01 -  Preheat oven to 425°F. Line a large baking tray with parchment paper. 
 02 -  Combine French fries with olive oil, sea salt, and ground black pepper in a mixing bowl. Toss thoroughly. 
 03 -  Spread fries evenly on prepared tray. Bake for 25 minutes, turning halfway through until golden and crisp. 
 04 -  Transfer baked fries to an ovenproof serving dish. Reduce oven temperature to 400°F. 
 05 -  Evenly sprinkle shredded mozzarella, shredded cheddar, and chopped bacon over the fries. 
 06 -  Return dish to oven. Bake for 5 to 7 minutes until cheeses are fully melted and bubbling. 
 07 -  Remove dish from oven and immediately drizzle truffle oil evenly over the hot fries. 
 08 -  Sprinkle with grated Parmesan, chopped parsley, and sliced spring onions. Serve immediately while hot.
