01 - In a clean glass jar, dissolve organic cane sugar into filtered water using a non-metallic spoon.
02 - Add water kefir grains or ginger bug and fresh lemon juice to the jar, stirring gently.
03 - Cover the jar with a breathable cloth or coffee filter secured by a rubber band. Leave to ferment at room temperature (68–77°F) for 24–48 hours until the mixture is lightly sparkling and tangy.
04 - Remove kefir grains or ginger bug using a fine mesh strainer and reserve for future use or discard.
05 - In a pitcher, blend the fermented soda base with fresh orange juice, lime juice, and mint leaves. Stir gently to combine.
06 - Fill glasses with ice, pour in the mocktail, and garnish each glass with an orange slice and additional mint as desired. Serve immediately for optimal carbonation.
