01 - Arrange tortillas flat on a clean cutting board.
02 - Evenly spread 1 ounce (2 tablespoons) of softened cream cheese over each tortilla.
03 - Place one slice of cheddar or Swiss cheese in the center of each tortilla.
04 - If desired, sprinkle tortillas with chopped dill and red onion, then drizzle with yellow mustard.
05 - Set one whole dill pickle along the edge of each tortilla.
06 - Roll each tortilla tightly around the pickle to fully contain the fillings.
07 - Cut each roll into 1-inch pieces for individual servings or serve whole as preferred.
