# Directions:
01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a medium bowl or large jar until well blended.
02 - In a small bowl, mix matcha powder, peppermint extract, and green food coloring (if used) with 2 tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture back into the main pudding base until uniformly combined and vibrant green.
04 - Cover and refrigerate for at least 4 hours or preferably overnight, allowing the pudding to thicken and achieve a creamy texture.
05 - Stir the pudding well before serving, then spoon into serving dishes and top with yogurt, cacao nibs or chocolate chips, chopped mint, and fresh berries as desired.
