01 - Preheat oven to 425°F. Line a baking sheet with parchment paper. If using wooden skewers, soak in water for 10 minutes.
02 - In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, sugar, smoked paprika, cayenne pepper, and 1 cup crushed Flamin Hot corn chips.
03 - Add cold cubed butter to the flour mixture. Cut it in using a pastry blender or fork until mixture resembles coarse crumbs.
04 - Stir in shredded cheddar cheese, sliced scallions, and diced jalapeño, if using.
05 - Pour in cold buttermilk and mix gently until just combined, taking care not to overwork the dough.
06 - Separate dough into 8 equal portions. Using floured hands, shape each into a 2-inch ball and gently flatten into a disk.
07 - Thread each biscuit disk onto a skewer, pressing gently to secure. Space biscuits to allow even baking, or use one disk per skewer as preferred.
08 - Arrange skewers on the prepared baking sheet. Brush each biscuit with melted butter and sprinkle with extra crushed Flamin Hot corn chips.
09 - Bake skewers for 16–18 minutes until biscuits are golden brown and cheese is bubbling.
10 - Allow biscuits to cool slightly on the baking sheet. Serve warm as a snack or appetizer.
