- Wet Ingredients: 3/4 cup (170 g) unsalted butter, melted and slightly cooled; 1 cup (200 g) light brown sugar, packed; 1/2 cup (100 g) granulated sugar; 2 large eggs, at room temperature; 2 tsp pure vanilla extract
- Mix-ins: 1 cup (170 g) Cadbury mini eggs, chopped; 1 cup (170 g) pastel M&Ms
Instructions
- 1. Preheat your oven to 350°F (175°C). Line a 9x13-inch (23x33 cm) baking pan with parchment paper, leaving some overhang for easy removal.
- 2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- 3. In a large mixing bowl, whisk the melted butter with the brown sugar and granulated sugar until smooth and combined.
- 4. Add the eggs and vanilla extract, whisking until fully incorporated.
- 5. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until combined. Do not overmix.
- 6. Gently fold in the chopped Cadbury mini eggs and half of the pastel M&Ms.
- 7. Spread the dough evenly into the prepared pan. Sprinkle the remaining M&Ms and a few extra mini egg pieces over the top for decoration.
- 8. Bake for 23–26 minutes, or until the edges are golden and the center is just set. Do not overbake for soft bars.
- 9. Remove from the oven and allow to cool completely in the pan before lifting out and cutting into bars.
