# Directions:
01 - Set the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
02 - Rinse the squash thoroughly, trim ends, then slice into ½-inch rings. Remove seeds from each ring using a spoon.
03 - In a large bowl, combine squash rings with olive oil, maple syrup, sea salt, black pepper, and ground cinnamon until evenly covered.
04 - Lay the coated squash rings in a single layer on the prepared baking sheet.
05 - Bake for 20 to 25 minutes, turning the rings halfway through, until they achieve a golden color and tender texture.
06 - Transfer baked rings to a serving platter and while still warm, sprinkle with chopped pistachios and parsley if desired.
