# Directions:
01 - In a large skillet over medium-high heat, add 1 tablespoon olive oil. Introduce the quartered potatoes, season with kosher salt, black pepper, and smoked paprika. Cook, stirring occasionally, until golden brown and tender, about 12 to 15 minutes. Transfer potatoes to a plate and cover to keep warm.
02 - Pat sirloin steak cubes dry with paper towels. Season thoroughly with kosher salt and black pepper.
03 - In the same skillet, add the remaining olive oil. Once hot, arrange steak pieces in a single layer. Sear for 2 to 3 minutes per side until browned and cooked to preferred doneness, working in batches if needed. Transfer steak to the plate with potatoes.
04 - Reduce heat to low. Add unsalted butter and minced garlic to the pan, stirring until the garlic is fragrant, about 30 seconds.
05 - Return steak bites and potatoes to the pan. Toss thoroughly to coat in garlic butter. Garnish with chopped fresh parsley and serve immediately.
