01 - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - In a bowl, combine the chopped turkey, prepared stuffing, and optional gravy. Mix thoroughly and season to your preference.
03 - Cut the pie crusts or puff pastry into 4 to 6 equal rectangles. Place a portion of the turkey filling onto one half of each rectangle. Fold the other half over to cover the filling, then crimp the edges firmly to seal.
04 - Brush the tops of the assembled hand pies with the egg wash. Place them on the prepared baking sheet and bake for 18 to 22 minutes, or until they are deeply golden brown and the pastry is cooked through.
05 - While the pies are baking, mix together the cranberry sauce, orange juice, and orange zest in a small bowl. Serve the warm hand pies with the cranberry dip, garnished with flaky salt and fresh thyme leaves.
