# Directions:
01 - Preheat the oven to 350°F. Line a 24-cup mini muffin pan with paper liners or lightly grease it.
02 - Whisk together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
03 - In a separate bowl, whisk the egg, whole milk, vegetable oil, and vanilla extract until smooth.
04 - Gently fold the wet ingredients into the dry mixture until just combined, avoiding overmixing.
05 - Carefully fold in fresh raspberries to prevent them from breaking apart.
06 - Beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
07 - Spoon muffin batter into each cup until about two-thirds full. Add approximately 1/2 teaspoon of cream cheese mixture at the center of each muffin. Swirl gently with a toothpick or leave as a pocket.
