01 - 4 German sausages (such as Bratwurst or Bockwurst), sliced
→ Vegetables
02 - 1 large onion, diced
03 - 2 carrots, sliced
04 - 2 medium potatoes, peeled and diced
05 - 2 celery stalks, sliced
06 - 1 clove garlic, minced
→ Broth & Seasonings
07 - 5 cups low-sodium chicken or vegetable broth
08 - 1 tablespoon vegetable oil
09 - 1 teaspoon dried marjoram
10 - 1/2 teaspoon caraway seeds (optional)
11 - Salt and freshly ground black pepper, to taste
→ Garnish
12 - 2 tablespoons fresh parsley, chopped
# Directions:
01 - Heat vegetable oil in a large pot over medium heat. Add sliced German sausages and cook for 3 to 4 minutes, stirring occasionally, until lightly browned. Using a slotted spoon, transfer the sausages to a plate and set aside.
02 - In the same pot, add diced onion, sliced carrots, celery, and minced garlic. Sauté for 3 to 4 minutes, stirring frequently, until the vegetables begin to soften.
03 - Stir in peeled and diced potatoes. Cook for an additional 2 minutes, allowing the flavors to combine.
04 - Pour in the chicken or vegetable broth, then add dried marjoram and caraway seeds if using. Bring the mixture to a boil over high heat.
05 - Reduce the heat to low, cover the pot, and simmer for 10 to 12 minutes until the potatoes and carrots are fork-tender.
06 - Return the browned sausages to the pot. Simmer for 2 to 3 additional minutes to heat through.
07 - Season the soup with salt and freshly ground black pepper according to your preference.
08 - Ladle hot soup into bowls and garnish with chopped fresh parsley prior to serving.
