# Directions:

01 - Place peeled and cubed potatoes into a large pot. Cover with cold water, add 1 teaspoon salt, and bring to a boil. Cook until potatoes are fork-tender, approximately 15 to 18 minutes. Drain well and return to the pot. Mash with butter, whole milk, shredded cheddar, and ground white pepper until smooth and creamy. Keep warm until serving.
02 - While potatoes cook, heat olive oil and butter in a large skillet over medium-high heat. Season pork chops evenly with kosher salt and black pepper. Sear each side for 3 to 4 minutes until golden-brown and internal temperature reaches 145°F (63°C). Add thyme sprig to skillet if using for additional flavor. Transfer cooked chops to a plate and tent with foil to rest.
03 - Reduce heat to medium. Add butter to the skillet drippings, then whisk in flour and cook for 1 minute to form a roux. Gradually whisk in chicken broth and Dijon mustard. Simmer constantly whisking for 3 to 5 minutes until gravy thickens. Season with salt and pepper to taste.
04 - Meanwhile, toss trimmed green beans with olive oil, salt, and pepper. Steam or sauté over medium heat until bright green and crisp-tender, about 5 to 7 minutes.
05 - Divide cheddar mashed potatoes into bowls. Top each with a seared pork chop, drizzle with warm pan gravy, and serve green beans alongside.
