13 - Crusty bread, to serve (optional)

# Directions:

01 - Preheat oven to 400°F.

07 - Remove from oven, garnish with chopped fresh parsley, and serve immediately. Optionally, accompany with crusty bread.

# Expert Advice:

01 -
  • Everything cooks in one dish, so cleanup is as easy as the cooking itself.
  • The feta turns golden and creamy, mingling with the roasted tomatoes in a way that feels indulgent without any fuss.
  • You can have it on the table in half an hour, perfect for lazy mornings or quick dinners when you want something colorful and satisfying.
02 -
  • Don't use crumbled feta, the block holds its shape and develops a creamy, molten center that crumbles can't match.
  • Watch the eggs closely in the final bake, overcooked yolks turn chalky and you lose that luxurious runny center that makes this dish so good.
  • If your tomatoes aren't very ripe, add a small pinch of sugar to the vegetables before baking to bring out their sweetness.
03 -
  • Use a ceramic or glass baking dish, it holds heat evenly and looks beautiful when you bring it to the table.
  • Let the dish rest for a minute or two after baking so the eggs finish setting gently and the flavors settle together.
  • If you like your yolks fully cooked, leave the dish in for an extra 2 minutes, but check often so the whites don't get rubbery.
