- Preheat the oven to 400°F. Line a 9x9-inch baking pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry cutter or fork until the mixture forms coarse crumbs.
- Add cold buttermilk to the mixture and stir gently until a shaggy dough forms. Transfer dough to a floured surface, pat to a 1-inch thick rectangle, fold into thirds, pat out again, and fold once more for optimal flakiness.
- Press the prepared dough evenly into the lined baking pan.
- Combine buffalo sauce, melted butter, ranch dressing, garlic powder, and onion powder in a small bowl. Spread evenly over the biscuit dough.
- Stir together pure maple syrup and grated ginger, then drizzle over the buffalo ranch layer.
- Scatter crushed pretzel twists across the top. If desired, sprinkle shredded cheddar cheese and chopped chives.
- Bake for 22 to 25 minutes, or until golden brown and cooked through in the center.
- Allow to cool in the pan for 10 minutes, then lift out and slice into bars. Serve warm or at room temperature.
