01 - 2 ripe mangoes, peeled and roughly chopped (approx. 2 cups)
02 - 2 tablespoons agave syrup
03 - Juice of 1/2 lime
→ Coconut Chia Layer
04 - 1 cup canned full-fat coconut milk, well shaken
05 - 2 tablespoons chia seeds
06 - 2 tablespoons unsweetened shredded coconut
07 - 2 tablespoons agave or maple syrup
08 - 1 teaspoon vanilla extract
09 - Pinch of salt
# Directions:
01 - Combine mango pieces, agave syrup, and lime juice in a blender, blending until smooth. Set aside.
02 - In a bowl, whisk coconut milk, chia seeds, shredded coconut, agave syrup, vanilla, and salt. Let thicken for 10 minutes, stirring occasionally.
03 - Pour a thin layer of mango puree into each ice pop mold, filling about halfway.
04 - Spoon coconut chia mixture on top of mango layer, filling molds completely.
05 - Place ice pop sticks into molds, gently tap to release air bubbles, and swirl lightly for marbled effect if desired.
06 - Freeze for a minimum of 4 hours until completely firm.
07 - Briefly run warm water over molds exterior to release ice pops. Serve immediately.
