DIY Hummus Homemade Pita Veggies (Print View)

# Components:

→ Hummus

01 - 1 1/2 cups cooked chickpeas (or 1 can, drained and rinsed)
02 - 1/4 cup fresh lemon juice (about 1 large lemon)
03 - 1/4 cup tahini
04 - 1 small garlic clove, minced
05 - 2 tbsp extra-virgin olive oil, plus additional for serving
06 - 1/2 tsp ground cumin
07 - 2 to 3 tbsp cold water
08 - 1/2 tsp sea salt

→ Homemade Pita Bread

09 - 2 cups all-purpose flour, plus extra for dusting
10 - 2 tsp instant dry yeast
11 - 1 tsp sugar
12 - 3/4 cup warm water
13 - 1 tbsp olive oil
14 - 1/2 tsp salt

→ Veggie Sticks

15 - 2 large carrots, peeled and cut into sticks
16 - 1 cucumber, cut into sticks
17 - 1 red bell pepper, cut into strips
18 - 1 yellow bell pepper, cut into strips
19 - 1 cup cherry tomatoes

# Directions:

01 - In a food processor, combine tahini and lemon juice; process for 1 minute until creamy.
02 - Add olive oil, minced garlic, ground cumin, and sea salt to the mixture; process for 30 seconds. Incorporate chickpeas and process for 1 minute. Scrape sides, add 2 tablespoons cold water, and blend until smooth and fluffy, adding more water to reach desired consistency.
03 - Taste and adjust salt or lemon juice as needed, then transfer to a serving bowl. Drizzle with olive oil and optionally garnish with paprika or sesame seeds.
04 - In a bowl, dissolve instant yeast and sugar in warm water; let sit for 5 minutes until frothy.
05 - Add all-purpose flour, salt, and olive oil to the yeast mixture; mix until a dough forms.
06 - On a floured surface, knead the dough for 5 to 7 minutes until smooth and elastic.
07 - Place dough in a lightly oiled bowl, cover, and let it rise in a warm area for 1 hour.
08 - Preheat oven to 475°F and place a baking stone or tray inside to heat.
09 - Punch down risen dough, divide into 6 equal balls, and roll each into a circle approximately 1/4-inch thick.
10 - Place rolled dough on the hot baking surface and bake for 3 to 4 minutes until puffed and lightly golden.
11 - Cover baked pitas with a clean kitchen towel to retain softness.
12 - Wash and cut carrots, cucumber, red and yellow bell peppers into sticks and strips. Arrange alongside cherry tomatoes on a platter.
