# Components:

→ Pasta

01 - 12 ounces spaghetti or linguine
02 - 1 tablespoon kosher salt (for pasta water)

→ Avocado Sauce

03 - 2 ripe California avocados, peeled and pitted
04 - 2 tablespoons fresh lemon juice
05 - 2 cloves garlic, minced
06 - 1/4 cup extra virgin olive oil
07 - 1/4 cup Greek yogurt or sour cream
08 - 1/3 cup fresh basil leaves, loosely packed
09 - 1/4 teaspoon sea salt
10 - 1/4 teaspoon freshly ground black pepper

→ Garnishes & Toppings

11 - 1/3 cup cherry tomatoes, halved
12 - 2 tablespoons red onion, finely diced
13 - 2 tablespoons everything bagel seasoning
14 - 2 tablespoons toasted pine nuts (optional)
15 - Fresh basil leaves, for garnish

# Directions:

01 - Bring a large pot of generously salted water to a rolling boil. Add pasta and cook until al dente, following package directions. Before draining, reserve 1/2 cup of the pasta water. Drain the pasta thoroughly.
02 - While the pasta is cooking, combine the ripe avocados, fresh lemon juice, minced garlic, extra virgin olive oil, Greek yogurt (or sour cream), fresh basil leaves, sea salt, and black pepper in a food processor or blender. Process until the mixture is utterly smooth and possesses a creamy consistency.
03 - Taste the avocado sauce and make any necessary seasoning adjustments. If the sauce appears too dense, incorporate a small amount of the reserved pasta water to achieve the desired velvety texture.
04 - Return the drained pasta to its original pot. Pour the prepared avocado sauce over the warm pasta. Toss gently to ensure the pasta is evenly coated. Add more reserved pasta water, a little at a time, if a silkier consistency is desired.
05 - Portion the dressed pasta onto individual plates. Garnish generously with the halved cherry tomatoes and finely diced red onion. Sprinkle liberally with everything bagel seasoning. If using, add toasted pine nuts and a few fresh basil leaves.
06 - Serve the California Avocado Pasta immediately to ensure optimal flavor and textural experience.
